Recipe :: Spicy Heirloom Tomaotes & Sweet Corn

This month tomatoes are perfection and I just can't not live on tomatoes during the final few months of summer. I got these lovely heirlooms in every color, rich, juicy, and sweet. Also sweet corn is perfect this time of year. I sliced the corn raw and its so fresh and sweet. Top it off with a little olive oil, citrus and spicy pepper and your good to go. So fresh, highly addictive and it doesn't get any easier. Did I mention healthy?

Ingredients

heirloom tomatoes
fresh corn
chives (optional, or your favorite fresh herb)
sea salt and pepper
pinch of cayenne or paprika
drizzle of olive oil
squeeze of lemon or lime

Method

Rinse and slice tomatoes, arrange them on a plate. Take a serrated knife and run it gently down the ear of corn. Sprinkle the corn on top of the tomatoes. Drizzle with a little olive oil, squeeze of citrus, top with sea salt, fresh ground pepper and a little cayenne pepper for a kick.
